Day 233

I am grateful for zucchini.

I buy them year round. I love the bounty of the plants, so I always plant them in my garden. I love grilling them and found that marinating slices in Italian dressing and sprinkling with Parmesan afterward is deluxe!

It seems to be a lowly sort of vegetable, but I love how versatile they are. The younger ones can be cooked a hundred ways, and the older ones make marvelous breads, cookies, soups, casseroles, and relishes. A friend made a mock apple pie with them, and another friend didn't believe me when I told her what the filling really was.

Thank You, Lord, for the humble and versatile zucchini.
